Are there any performance differences between the stock 540 can brushed motor that the Hornet EVO Kit comes with and the 540 sport tuned motor?

I may want to do that as my first upgrade in the future or get it if/when I get my hotshot II as an upgrade.

Yes, there is.  I swapped the EVO to the Tourque Tuned and the difference is noticeable on 2S.

There are a number of videos comparing the two motors on YouTube etc.

Sport tuned motors run a little quicker, and they usually get hotter. I'd worry about it getting cooked in the EVOs DT-02 gearbox.

If you want a bigger boost in power consider a 14-12 turn 550 sized can with a fan at the end. They run cooler and they will put down more power.

I like this video. He actually tested them out on the field.  Aside from the mandatory ball bearing upgrade (which improves about 15% on everything), the Sport Tuned is my favorite basher upgrade.  

If you look at the benchmark, the silver can shows 14,000 RPM, Torque Tuned shows 16,000 and the Sport Tuned, 18,500 (at 7.2v).  That's about 30%.  But in real life with the load, it improves about 15-20% (15% in acceleration, 20% top speed).  That's not "oh-wow" fast like a 10.5t brushless.  But it makes things a lot more fun without stressing about breaking stuff.

A steel pinion would be a good idea if you want to run through dozens of packs every season. Especially if you use LiPo batteries.  However, if you used good Teflon grease, the stock aluminum pinion should hold up fine for a dozen or two packs.

Please excuse my dumb question, but since Torque Tuned and Sport Tuned seem to be no "modified" motors, how do you get the endbell off without ruining the motor? Or ist that part of the Video?

I'm sorry, I was far less than clear. When the topic is about the motor, the "ball bearing" statement definitely sounds like upgrading the motor. 

What I meant was bearings for the drivetrain and the wheels.  I've done bearing upgrades on modified motors. It didn't improve RPM much (maybe like 3-400 rpm). But I would think bearings would improve their torque and runtime. Since the cans of the motors cannot be opened on the Sport Tuned, etc, I oil the bushings when I could.

I don't disagree with this but I have a bunch of models now and I'm realizing that in many cases, the silver can is "enough."  

A couple off the top of my head: 

The Lunchbox has more than enough power to do its thing and going any faster just means more rollovers.  The Lancia 037 TA-02S looks great zipping around at the ~15mph or so that the silver can provides. I worked hard to get those decals right.  I absolutely drive it but I do so carefully and the though of crashing it makes me cringe. 

Raw performance isn't always necessary for a kit to fulfill it's design intentions in my opinion.

Let's be clear here......in a Hornet EVO the Tourque Tuned I dropped in along with the larger 19T pinion is a really inexpensive performance upgrade but we are talking a 15-20% improvement which for like $17 and the cost of a pinion is a good upgrade for a Hornet.......That level of power with 2S is still within what the EVO stock setup and suspension can easily control and be "fun".

IMHO, the Hornet EVO is a great but modest "fun" car, I personally wouldn't toss more power or $ than a Tourque Tuned or Sport Tuned in it......I like mine with the TT in it and it provides enough fun and a break from driving my high $ racing platforms......

I like Cage Man's tests and video but I remember a while back, his bearings test video and brushless test video were slammed here by those that did not like the results.

This. I used a 380ST, 540 silver can and 550 in my DT-02 and the only thing that can work without melting is the 550.

I agree.  

My Wild Willy 2 still has the stock silver can it came with.  It already flips sometimes. The heavy resin body wants to stay still, when the chassis run away from under it.  Upgrading would make it flip all the time, which would get old fast. So I don't upgrade. Just like you, my Lunchbox also has the original silver can.  

I'm not used to on-road chassis. M-06 was fast enough for my slow reflexes.  The top speed itself shouldn't be much faster than buggies. Perhaps it's the quick acceleration and steering.  So M-05, M-06, MB-01 all have silver cans. M07 will probably keep the silver can as well when it's built.  

My CC-01 has not been upgraded. It came with larger tires. So I might experiment since the Sport Tuned has 34% more torque.
