I am going to have a crack at Touring car racing, I have a 'sport tuned' tamiya motor already but should I get a 27 turn motor to use instead?

Depends on your club rules. A good 27 turn stock will be faster than a Sport Tuned, but if neither is raced at your club it makes little sense to get one.
