Should I???

Well I got that knock off Grasshopper made by Echo recently. The question is should I go ahead and cut the wired remote control off and make it into a 'propper' RC buggy or should I leave it as it is since it is indeed a 'rare' although probobly not valuable buggy? It would make a neat project to convert it from toy to a, well, er, more propper toy. [?]

How much did you buy it for? That's how much it is worth. Rare and valuable sometimes go together. But more often than not, They don't.

I saw hack it up and make a proper runner.

Often those toy copies have also very cheap plastics, gears, axles etc. so it wouldnt make much sense, as with a propoer motor the car wouldnt last long.
