Does anyone have any good marinade recipes?

I been stir-frying up a storm these last couple of weeks, but sherry and soy-sauce is getting a bit boring now.

I don't want recipes for pot-roasts, stews, casseroles etc, just marinades for meat.

Got the rest of it down pat now - diced peppers, wafer thin sliced mushrooms, sliced olives etc.

IF BIBBO POSTS ANYTHING POTENTIALLY LETHAL, PLEASE LET ME KNOWid="red">id="size2">[;)]

And another thing, what is the thing called that you get cloves of garlic from? The bit you take off is a clove, but what is the whole garlic called?

Whole garlic is called a "Bulb" I think. When I was at school I used to work at a garlic farm during the holidays. On the Isle of Wight there is one of very few garlic farms in Europe and we used to clean the garlic after it had been dryed for a month, so that the Bulbs look like what you buy in the supermarket.

Horrible dirty work but I earned £100 a week in 1987!!..Yeah ha!!

See, I thought it was a bulb too, but that was dismissed by 'her at the sink' as too obvious!

Haven't tried ricin yet (asked around, but no-one stocks it), but Tilda do some nice mediterranean rice with peppers and stuff in it, called rizzin!

Two minutes, full power, nice rice[:D]

Dunno why she makes a load of fuss about me doing some cooking, it's easy[;)]

I would agree on the garlic 'bulb' - although I have to admit I've been converted to some great stuff you can get in the supermarket called 'Lazy Garlic' - lasts for ages and not at all 'fake'. Should work well in marinades too [:)] Happy cooking (and eating).

I take a chemical view to cooking... [;)]

re any Marinade, you need:-

1) an Oil:- olive, sesame or just cooking oil. Just a tsp or two.

2) an Acid:- citrus juices, vinegars, bad wine. Just a splash.

3) a Flavouring:- your pick - salty, sweet, sour, fruity etc.

Stir-fries don't actually need much marinades.

Go with a touch of sesame oil, some soy and some oyster sauce.

Use real nice fresh meats, sliced real thin.

Got a bit bored with plain meat, an hours dunk in the bath make it a lot tastier!

My current wash is sherry, soy, 4 or 5 cloves crushed garlic, lemon juice and black pepper.

Meat goes in early, then soaks whilst everything else gets diced into 9mm cubes, except for the 'rooms which are sliced 'til translucent[:P]

OK there are some valuable contributions here, but I am going to let the secret out.

I know the topic here is stir-fry, but when it comes to a first class marinade for BBQ, lets we not forget the primo ingredient....Coca-Cola!!

Yes it's true, frow in your favs, but this one is unbeatable for steaks.....

Chutney, Ketchup, a lil vinegar, mixed herbs, garlic and then the Coke...add anything else that tickles your palate ie chillies....and then get some **** hot coals, a tail of fillet and launch it on after soaking for 2 hours in the fridge...!!

Edge is right Coke for BBQ is great, just like Beer in stew is even better. Or if you want to go back to the college days Beer and Cheerios ain't half bad either.

Nothing beats BEER BATTER though!!!

Gives you the squits for a couple of days, but you can get drunk on the 'gravy'[:)]
