just wondering if it would be worth purchasing a 20t pinion, i run the car pretty stock just ball raced and lock rear diff, has standard rs540sh motor fitted. ive bought this car for the beach but just woundered if anyone runs the 20t. also the rs-540sh motor fitted what does the sh stand for. ive tried looking for tamiya motor info but failed, thought it would be handy to know difference to make choosing the right motor for the job.

Are you trying to make your Volks faster or more off road capable?  With the silver can motor you can use any of the 2 pinions but I have a 80 turn LRP Truck Puller 2 motor in my beast/scale crawler and I run the 16 tooth pinion. I don't want the high speeds at all, I want the lower end grunt and I get it with that combo.

I also run a Truck Puller 2 also but I use a 20t pinion because otherwise I find the car to be too slow for my needs.

Gearing is up to you. 16 is more torque, 20 is more speed. The RS-540SH is just a stock motor, if you want more torque and less speed get an LRP Truck Puller (80 turns) or an Integy Lathe Motor (45,55,65 turns). If you want your Touareg to go faster with less torque you could mount a mod stocker of some sort, but keep in mind that XCs generally don't like to go fast.
