OK, I'm going to get back into racing this winter, but I've decided to take the plunge and turn some of my batteries into side-by-side packs. I currently only have an instant-heat type soldering iron, which I doubt will suffice.

What sort of soldering iron is best? Please recommend a wattage and any other important things I'll need to consider when I buy.

For making battery packs, I use a cheap 80 Watt iron, similar to this one..

I also have a smaller 40Watt iron for doing fiddly work such as deans connectors..

I would also recommend a battery building jig if you have a few packs to build, see below..

I use that same 80watt iron. Get the one that says it's for Stained Glass as it comes with two different tips. The tip shown, and a smaller version that is best for hobby stuff like batteries. That large tip is pretty much useless for soldering hobby stuff...

I also use the Weller 80W stained glass iron. I use the bigger tip for all my battery packs, the larger head helps retain heat for a faster job.
