So which gear ratio makes the car go faster. I am currently running a 61/19 gear setup giving me a gear ratio of 3.21:1. Would a 55/25 give me more top end speed.

Yes, but I would check the ESC and motor recommendations concerning the Final Drive Ratio (FDR on the chart). What ESC and motor are you running?

All of those ratios on that chart are wrong, in that they don't take into account the internal ratio of the car. Try matching the FDR to the reccomended gearing supplied with motors or brushless systems (which all use the industry standard of Spur divided by Pinion, multiplied by Internal Ratio) using that chart, and you'll be left with a lot of fried electronics that the manufacturers won't touch in terms of warranties (as you'll have taken them well beyond their limits).

Here is the correct one to use:

The higher the FDR (when the FDR becomes a smaller number), the more top end speed you'll get, at the expense of acceleration.

If you look closely, you will notice that the FDRs in my table are the same as this. What this one is missing is the 61T/19T combination which does fit (for fitting brushless).
