The Uni-mog is on hold until I can get somewhere warm to paint the body but while I wait I am looking at my left overs.

I have fitted some no name Chinese wheels/tyres and the look good and are soft.

I have the stock wheels and tyres that "consensus" says are too hard.

And then I have the 54554 hop-up wheels. 5 spoke with rock block tyres

So my question is. Do I keep the Chinese specials and dispose of the others or run another combination?

I need some space and something needs to give.

I'm pretty sure I've got those 'Chinese' wheels on my CC-01 and they work just fine for me!

I love it when I get the cheap answer I want :-)

I use the Chinese tyres fitted to Tamiya wheels on my CC-01 Pajero to good effect, although in your case I think the Chinese wheels suit the Unimog aesthetic better. The stock Tamiya plastic tyres are good for static display, and I can't speak from experience with the Rock Blocks.

That is my thinking.

Might get the two other sets on eBay later.

I want a dump truck but am in no position to justify or store one at the moment...

I think the Chinese ones you've got are the same as I have on my Pajero. Are they marked KRT on the sidewalls? They're also called Kong tyres elsewhere, mine are 90mm versions.

They're nice and soft and certainly better than a Tamiya tyre, but not in the same league as a proper crawler tyre which are generally a softer, grippier rubber. I have one spare if anyone needs one for their 'spare' tyre on their rig.

Despite throwing money at it I don't think it will ever be a real crawler. This will just be a forest walk type toy I think

It will never be a crawler, sure, but it could be a mighty fine scaler. A rig with scale looks and realistic performance over scale-appropriate terrain is a worthwhile project IMO.

I guess that is what I am going for and the wheels suit that well.

Yep, they don't deform too much provided they're on a beadlock rim or glued all around their internal perimeter, so they're pretty good for going quick off-road too.
