Can I run more than one car on a Carson Reflex Stick Pro 3.1?

It doesn't have a model memory, so basically no.

Not sure how it qualifies for Pro status, dread to think what spec the Amateur version has!

For basic running, model memory doesn't matter at all. I use one radio, with no memory, in ten different cars. I have two receivers for it, and both have Velcro on the back. As long as you carefully center the steering servos and set up all the ESCs the same, then model memory is completely redundant. You may have to tweak the trim knobs here and there, but that's not a big deal.
